A vocational diploma in electronics hardly predestined Bannwart for a career in cooking, and, for financial reasons, he eventually abandoned this path. This led to Jean-Michel Bannwart joining the family vocation to proudly promote charcuterie products and the catering profession. He studied under Jean Pillette, Bernard Perot and Jean-François Deport, three chefs awarded the title of Un des Meilleurs Ouvriers de France (a prestigious French diploma issued by the State). He then embarked on the great adventure of competition life. He joined the family of Meilleurs Ouvriers de France in 1997,then championing the cause throughout his career.
With a critical eye and a sophisticated palate, he then moved into gastronomic regions, taking an interest in their industries and cultures. This led him to work as a pastry chef for Pascal Niau and to share his research and development ideas with Guy Krenzer, both of whom are also holders of the same prestigious diploma.
Today, bolstered by his recognized experience, Jean-Michel Bannwart's focus is on supporting those that wish to perfect their art by providing training, carrying out auditing campaigns, and promoting the future of French gastronomy by coaching and supporting the future generations competing for the diploma.
